TOP BLADE 700 g

Top blade is located in the middle of the shoulder. It cross-cut from the top blade sub primal, also known as Infraspinatus, and is strongly marbled. The infraspinatus softens eventually yet provides to the meat juiciness. This is one of the reasons the top blade is perfect for roasting and goes well with any kind of sauce. It also cuts a perfect piece of steak for a minute finish.
