One of the fine meats is often used for stewing and roasting. Due to its large size, beautiful symmetrical slices could be cut. These could be used for roulades or to make “ptáčky” – a typical Czech recipe roulade. What about “burgundy roast”? This delicious dish cannot be made without mature shoulder!
