Flank steak comes from the beef belly (navel). It is a lean slice of meat from trained abdominal muscles. To enjoy the best flank steak ever, it is necessary to cut it perpendicular to the muscle fibers – use a very sharp knife and cut the meat across by the angle of 45° to thin slices.
